When the footing is poor, I pull out the long lines and work from the ground (mostly at walk). It helps to keep things interesting for me and my horse, as well as keeping them responsive to the aids. I recommend working with a trainer if you have not done this before as you can get in dangerous situations if you aren't used to it!
